Preparation
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until the mixture is light and fluffy.
Add the pumpkin puree, egg, and vanilla extract. Mix until well combined.
In a separate bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
Gradually add the dry ingredients to the pumpkin mixture and stir until just combined. Do not overmix.
Coating and Baking
In a small bowl, mix together the coating ingredients: 1/4 cup sugar and 1 teaspoon cinnamon.
Scoop the dough into balls, about 1-2 tablespoons each, and roll them in the cinnamon sugar mixture.
Place the dough balls on the prepared baking sheet, spacing them about 2 inches apart.
Bake for 10-12 minutes or until the edges are lightly golden. The cookies will look soft but will firm up as they cool.
Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
