Instructions
Preparation
Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper.
In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth.
Add the pumpkin puree, eggs, and vanilla extract to the creamed mixture. Mix until well combined.
In a separate bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
Gradually add the dry ingredients to the wet ingredients. Mix until just combined, being careful not to overmix.
In a small bowl, combine the granulated sugar and cinnamon for the coating.
Baking
Scoop 2 tablespoons of cookie dough and roll it into a ball. Roll the ball in the cinnamon-sugar mixture, then place it on the prepared baking sheet.
Repeat with the remaining dough, spacing the cookies about 2 inches apart.
Bake in the preheated oven for 10-12 minutes, or until the edges are set and the tops are slightly cracked.
Remove from the oven and allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
To keep your cookies fresh, store them in an airtight container at room temperature for about 5-7 days. They can also be frozen for up to three months.
